What is a Po' Boy Anyhow?

I'm going to New Orleans on Monday and still have no idea what a Po' Boy is and where I should buy one.

Which Savenièrres and what vintage goes best with a Po' Boy?

Are there many different Po' Boy flavors?

Try a crawfish po' boy at Johnny's in the Quarter. Deep-fried crawfish tails, mayonaise, hot sauce and lettuce (for show) on bread. Fine stuff.

At Mother's, I can highly recommend their two po' boys with debris, the Ralph and the Ferdi (a Ralph with cheese). I'm a Ferdi man myself, unless I got it backwards as to which one has cheese, which I frequently do. FYI, only cash is accepted at Mother's, no credit cards.
